if you want to keep more honey flavor in your final product, you can add the honey after the boil. this doesn't drive off the aromatics. If you're using plain 2-row, then you don't have to worry about DMS production as much as you would with Pilsner or Munich. I'm paranoid about Sanitization so I dump in the honey in the last 15 minutes.

for the braggot, I made the crandaddy braggot in "Extreme Brewing" by Calagione and it came out brilliant. I have to admit that the month in primary, and the two months in secondary probably had something to do with it. but I converted the recipe to All grain using beertools since the book is extract based.
